Savory Wild Rice Soup
My husband BEGS me to make this soup over and over again. Any time I offer it as a dinner or lunch option he gets legit excited…it’s cute :)
INGREDIENTS
1 Cup Organic Wild Rice
1lb Boneless, Skinless Chicken Breast
1 Cup Onions (chopped)
3/4 Cup Celery (chopped)
1 Cup Carrots (chopped)
4-5 Cloves Garlic (minced)
6 Cups Low Sodium Bone Broth
2 Cups Filtered Water
3/4 Can Coconut Milk (organic with no gums or additives!)
Season as desired! I use this seasoning and this seasoning in mine.
INSTRUCTIONS
Add all ingredients to slow cooker, except for the coconut milk
Cover and cook on high for 3-4 hours or on low for 7-8 hours
As soon as the chicken is cooked through, remove from the slow cooker. Allow to cool and shred using a fork, set aside.
Once rice is fully cooked, add chicken back to pot and stir in coconut milk.
Store in air-tight mason jars in the fridge, use stove to reheat. Enjoy within 5 days.
