The Perfect Chicken Salad (Dairy + Gluten Free)
CHICKEN SALAD! One of my favorite summer staples.
It doesn't get much better than a warm summer afternoon, sitting on a patio, and eating chicken salad. But traditional chicken salad is filled with ingredients that will send me straight to the bathroom or keeled over in fetal position on the couch. No good!
Luckily I created a dairy free, egg free, and gluten free version that my hubby and I love! As I made this post he goes, "my mouth is literally watering looking at that photo..."
That's always a good sign 😉

INGREDIENTS
2 Organic, Skinless Chicken Breasts
Dairy Free/Lactose Free Yogurt
Purple Grapes (sliced)
Pecan Pieces
Organic Celery (in small cubes)
1 Head Butter Lettuce (for wraps)
Gluten Free Bread of choice
Black Pepper
INSTRUCTIONS
Bake chicken until it is cooked through. Let cool, then shred using a fork/knife or shredding shears.
Mix in dairy free yogurt until you reach the creamy consistency you desire. There’s really no WRONG way to do this recipe!
Mix in grapes, pecans, and celery. Pepper to taste (pepper makes a huge difference in this recipe!)
Enjoy as a lettuce wrap or a gluten free sandwich
