The Creamiest Dairy-Free Mashed Potatoes
I am a potato freak. I LOVE potatoes in all forms. Mashed potatoes were a staple in my house growing up, but they definitely were not dairy free! Lots of milk/cream and butter are traditionally what makes mashed potatoes so delicious. But they are not great for your gut in many ways! So I created this recipe so I could not feel the guilt of indulging in mashed potatoes, but also so I had something better for my gut.
I make these for every holiday and no one can ever tell they are not filled with milk and butter. I chalk that up as a WIN!

INGREDIENTS
1 bag of organic potatoes
NOTE: I use Yukon Golds but you can use any potato, even sweet potatoes! Make sure to use organic to avoid any sprayed pesticides
NOTE: I have used other garlic blends and definitely don’t taste as good with the potatoes as this one!
Coconut milk - 13.5oz bacns
I highly recommend this exact brand and kind (simple) I’ve tried other ones and it doesn’t taste the same.
INSTRUCTIONS
Start by washing your potatoes in a baking soda mixture
Cube potatoes and cook them in boiling water on the stove top until they are soft and can be easily punctured with a fork
Add to a large mixing bowl with coconut milk and use a hand mixer to whisk until fluffy
Add as much seasoning as you’d like as you go (I use quite a bit because I love the taste!)
Serve and enjoy!
NOTE: I use stasher bags and store extra potatoes in the freezer then let them thaw overnight in the fridge when I’m ready to reheat them. I use stove top to reheat these potatoes, we are a no microwave household!
