Homemade Coconut Clusters

We are in the thick of the COVID19 self-isolation right now and I’m searching my cabinets constantly for meals and snacks I can make for my husband and I––our little one is still on purees and milk so he’s well taken care of in the foodie department!

I remembered I had some pumpkin seeds in a jar from when we were on our “seeds in salads kick” and also chia seeds from all the failed attempts at making jam with them (I will conquer that one day!). Then there was a bunch of different types of coconut flakes so I thought––COCONUT CLUSTERS TO THE RESCUE!

INGREDIENTS

NOTE: I choose all organic ingredients for this recipe to avoid pesticides , heavy metals, and other chemicals.

  • 1 1/2 cups organic coconut flakes

  • 3/4 cup organic pumpkin seeds

  • 1/4 cup organic chia seeds

  • 1/4 cup + 2 tablespoons real, organic maple syrup

INSTRUCTIONS

  1. Preheat oven to 350 degrees

  2. Line a baking sheet with parchment paper

  3. Add the ingredients to a bowl and combine well. Make sure maple syrup is coating all of the dry ingredients.

  4. Place ingredients onto baking sheet and stack ingrients to make your ‘clusters’

  5. Bake for 7-10 minutes – until the coconut just begins to turn golden. Make sure to keep an eye on them so they don’t burn!

  6. Remove from oven

  7. Allow to  cool for at least 40 minutes––this is a VERY important step! It’s during this time when your clusters will ‘harden together’ and not fall into a granola-like consistency.

  8. Carefully remove them from the baking sheet and store in a glass air-tight container.
